There, he fell in love with Nashville hot chicken, enjoying it a little too often, to the detriment of his stomach. Seeking a healthier alternative, he turned to his sister, who crafted a recipe that transformed his hot chicken cravings into a business opportunity.
A Culinary Tribute
Hailing from Sweden, where his father was a chef, Barseghian saw the restaurant business as a way to pay homage to his late father’s legacy. Armed with a unique hot chicken recipe that’s easier on the stomach, he ventured to Las Vegas, where the hot chicken scene was ripe for the picking.
A Clucking Trend in Spokane
Chicken restaurants are soaring in popularity, and Barseghian believes it’s no coincidence. “Poultry, just in general, is a healthier option,” he says, noting that people are incorporating it more into their diets. Spokane reflects this trend, with Chick-Fil-A opening in north Spokane in December 2020 and two Popeyes Louisiana Kitchens set to join the scene—one in north Spokane and one in Airway Heights.
